Culturally Avurudhu is the time of family, community and games and of course food. For anyone who is familiar with Avurudhu food, the first seasonal favorite to cross your mind is Kokis. This tantalizing recipe made by using ‘7 Star’ flour and other basic ingredients, can be relished by everyone. Celebrate Avurudhu with a spicy twist with this scrumptious treat.

  • Preparation Time: 30 – 40 mins

 

Ingredients:

  • 7 Star all-purpose flour – 450g raw
  • 6 table spoons of coconut milk powder dissolved in 3 Cups water
  • 1 Egg
  • Turmeric for colouring
  • Chillie flakes
  • Grated cheese
  • Cooking oil for deep frying
  • Salt to taste
  • 2 table spoons of milkmaid

Method:

Initially sieve the rice flour well and mix with coconut milk & milkmaid. Add beaten egg, turmeric, chillie flakes, cheese and salt make the batter to the consistency of a pan cake batter. Let it rest for an hour. Heat oil, dip kokis mold in oil and then dip it the batter. Fry until crisp and drain. Voila these luscious and delicious spicy cheese kokis will be ready to be served and enjoyed. Ensure to store in an airtight container.
