How about a savory breakfast with a tangy twist? Bursting with flavor and fragrant, this morning meal will delight your whole family.  Upma  is a common South Indian, Maharashtran and a Sri Lankan Tamil breakfast dish, cooked as a thick porridge from dry roasted semolina or coarse rice flour and is quick and simple to prepare with a few ingredients.

  • Serves: 4 to 5

Ingredients:

  • 2 Cups ‘7 star’ Semolina
  • 3 Cups water
  • 1 Cup Milk
  • 1 Small finely chopped Onion
  • 3 Finely chopped Green Chili
  • 1 Sprig Curry Leaves
  • 1 Tablespoon minced Ginger
  • 1 Large finely chopped Carrot
  • 15 Finely chopped Beans
  • 1 Tablespoon Ghee
  • Salt to taste
  • 1 Teaspoon Turmeric Powder

For Seasoning:

  • 3 Tablespoons oil
  • 1 Teaspoon Mustard Seeds
  • 1 Teaspoon Channa Dhal / Kadalai Parippu
  • 1 Teaspoon Urad Dhal / Ulundu Parippu
  • 1 Teaspoon Cumin Seeds / Jeerakam
  • 10 broken Cashew Nuts
  • 1/4 Teaspoon Asafoetida / Hing / Kayapodi

Method:

Firstly boil the water and milk in a sauce pan. Then heat oil in a kadai/deep cooking pot. Add in all seasoning ingredients and let it sizzle in hot oil for a minute. Once it is done, add in onions, green chilli, ginger, curry leaves, carrots, and beans. Fry this mix for 5

minutes. Once it is fried, add in salt and turmeric powder. Saute this for couple of minutes.

Now add in ‘7 star’ semolina and fry it with the oil and vegetable mixture. Now pour in the boiling water and milk mixture and keep mixing. The mix will get thick. Now cover and simmer for 15 minutes with the lid closed. When the time is up, open the lid and fluff the Upma. Add the ghee and switch off the flame. Cover the pan with the lid. Let it sit for 10 minutes. After 10 minutes, fluff again and serve with chutney.
